Shepherd's pie is one of my all time favorite comfort foods. But it is loaded with calories, carbohydrates, and JUNK! So I have reinvented it to be healthy, low in calories, and kid friendly! I made this last night for dinner and my daughter ate her entire serving, and that rarely happens. Along with my husband telling me it tasted exactly like normal Sheppard's pie!!! Below is the recipe, please feel free to let me know if you enjoyed the dish.
Prep time: About 10 minutes Cook time: 25 minutes
Ingredients:
Meat:
-12 ounces lean organic ground turkey or chicken
-1 yellow squah
- half a yellow onion
- half a bell pepper
- 2 mushrooms
- carrots
Top (potatoes):
- 1 medium head of cauliflower
- handful of spinach
- 3/4 cup of cheese ( I used mozzarella)
- Water
- 1/2 Unsweetened almond milk
1.Pre heat oven to 350 degree.
2. Clean and cut up cauliflower into single flouters. Place in a microwave safe mixing bowl, add 1/2 a cup of water. Place lid or plate onto of bowl and cook on medium/high heat for 10 minutes.
3. Cut up all the veggies into small pieces then place in skillet on medium heat. (I used coconut oil for the non stick spray but you can use which you prefer.) Cook until tender. Then add the meat. Continue to stir every few minutes until meat is full cooked.
4. Once cauliflower is done (should be super tender) place it in a food processor ( I used my nutribullet) and add about 1/2 a cup of unsweetened almond milk then mix. Mix until the cauliflower resembles mashed potatoes. Then place back into bowl. Chop up the spinach really fine, then add the spinach and cheese into the bowl, mix all 3 ingredients until well blended.
5. Take fully cooked meat and veggies and place into a pan (I used a meatloaf pan). Spread everything out so it lays even on the bottom of the pan. Sprinkle a little bit of cheese on top. Then spread all of the mashed Cauliflower on top of the meat.
6. Place in pre heated oven for about 25 minutes, Once done let cool and enjoy!
