Homemade Pizza Hot pocket Recipe

I am a suckers for hot pockets, well lean pockets actually. The Chicken Broccoli ones are my favorite. My husband and daughter both love anything pizza. So I decided to make some homemade pizza pockets that are healthy and not full of weird chemicals I cannot pronounce. These are made with only minimal ingredients, and they taste AMAZING! There is no need to buy any of that pre packaged junk food when you can make them yourself and be way healthier! So simple to heat up too! Pop in the microwave for 1 minute and its ready to eat! 






Prep time: 20 minutes Cook time: 20-25 minutes

Calories: 200
Serves: 8 

Ingredients: 

Dough: 
-2 cups flower
-1 TBS cooking oil
-1 TBS baking powder 
- 2/3 cup water 

Filling: 
-  1/2 cup Pizza or pasta sauce  ( I used organic Simple truth 4 cheese spaghetti sauce)
- 1 cup Mozzarella cheese 
- 2 Pepperonis per pocket

Topping: 
- 1TBS butter 
- Italian seasoning 

1. Pre heat oven to 350 degrees. Then add flour, cooking oil, baking powder, and water into a large mixing bowl. Mix until the dough forms a ball ( using your hands) knead for about 30 seconds. 

2. Once dough is ready separate into 8 separate balls. Roll out until it forms an oval (Please note, it is extremely hard make a perfect piece). 

3. Pre measure all the pizza fillings into bowls then set aside. 

5. Once done rolling out the dough, place it on a flat surface. Then 1 at a time add a table spoon of pizza sauce to the center of the dough. Then sprinkle an even amount of cheese on top of the sauce. Then add the 2 pepperonis. 

6. Fold over one side of the dough to close it, you can fold over the excess dough or cut it off.  Then press down edges with a fort and then set onto a baking sheet. Repeat until all are done. 

7. Once all of the pizza pockets are on the baking sheet, place the butter into a bowl and heat in microwave for about 10-15 seconds. Once melted add a few shakes of the Italian seasoning into the butter and stir. Then spoon the butter mixture onto each of the pocket. 

8. Place in pre heated oven for 20-25 minutes or until golden brown. 

Now your hot pockets are done! Once they cool off wrap then in plastic wrap or in a sandwich bag and place in freezer. To heat up, unwrap the pizza pocket and place on a plate in the microwave for 1 minute. Then enjoy!

Healthy Alfredo

Believe it or not, I am not I am not the biggest fan of Alfredo, but my family is! So I decided to make a healthy version, and oh my goodness it is beyond good! This brings Alfredo to a whole other level! 

You will need a Vegetti (You can get them at Walmart, target, etc for $12-$15), and alfredo sauce. The Alfredo is the only "Unclean" ingredient in this recipe since i couldn't find organic. The Buitoni had the least amount of crazy (names I couldn't pronounce) ingredients. 



Prep time: 10 minutes Cook time: 30 minutes

Serves 2
Calories: 265

Ingredients:
-1 large zucchini
- half a yellow onion
- 2 whole mushrooms
- 1 clove of garlic
- 1 head of romaine lettuce
- chicken breasts
- Alfredo sauce (I used store bough buitoni)


1. Heat up pan and spray with non stick spray ( I use coconut oil).

2. Chop up onions, mushrooms, and garlic. Add to pan once hot saute for about 5 minutes.

3. While that is being cooked, slice up the zucchini with a Vegetti then add to the skillet. You may need to add more spray unless you choose to use a tablespoon or so of oil.

4. Cook chicken, I had meal prep chicken in the fridge that i just heated up.

5. Heat up the Alfredo sauce according to package directions.

6. Chop up Romaine lettuce and place in a bowl.

7. Once everything is cooked separate into 2 portions. Add the zucchini, onion, and mushroom mixture into a bowl. Then add as much lettuce as you like (It wont really affect the calorie count much if you add more lettuce) then the chicken. Give a light stir and then add the Alfredo and stir again.

Eat up! This is delicious and HEALTHY!

Healthy Shepherd's pie

Shepherd's pie is one of my all time favorite comfort foods. But it is loaded with calories, carbohydrates, and JUNK! So I have reinvented it to be healthy, low in calories, and kid friendly! I made this last night for dinner and my daughter ate her entire serving, and that rarely happens. Along with my husband telling me it tasted exactly like normal Sheppard's pie!!! Below is the recipe, please feel free to let me know if you enjoyed the dish. 


Prep time:  About 10 minutes Cook time: 25 minutes

Ingredients: 

Meat:
-12 ounces lean organic ground turkey or chicken
-1 yellow squah
- half a yellow onion
- half a bell pepper
- 2 mushrooms
- carrots

Top (potatoes):
- 1 medium head of cauliflower 
- handful of spinach
- 3/4 cup of cheese ( I used mozzarella) 
- Water
- 1/2 Unsweetened almond milk

1.Pre heat oven to 350 degree. 

2. Clean and cut up cauliflower into single flouters. Place in a microwave safe mixing bowl, add 1/2 a cup of water. Place lid or plate onto of bowl and cook on medium/high heat for 10 minutes. 

3. Cut up all the veggies into small pieces then place in skillet on medium heat. (I used coconut oil for the non stick spray but you can use which you prefer.) Cook until tender. Then add the meat. Continue to stir every few minutes until meat is full cooked. 

4. Once cauliflower is done (should be super tender) place it in a food processor ( I used my nutribullet) and add about 1/2 a cup of unsweetened almond milk then mix. Mix until the cauliflower resembles mashed potatoes. Then place back into bowl. Chop up the spinach really fine, then add the spinach and cheese into the bowl, mix all 3 ingredients until well blended. 

5. Take fully cooked meat and veggies and place into a pan (I used a meatloaf pan). Spread everything out so it lays even on the bottom of the pan. Sprinkle a little bit of cheese on top. Then spread all of the mashed Cauliflower on top of the meat.  

6. Place in pre heated oven for about 25 minutes, Once done let cool and enjoy!

Calories: 225 per serving
